Tongue loves to be braised, slow and low. Heart can hit the high heat, fast. We've loved beef heart tacos and are looking forward to smoking tongue on the Traeger or trying a braised recipe from the New York Times, soon. You get the whole thing here: whole heart and whole tongue. For the heart, you want to take the time to do some trimming, but you'll be rewarded with tender deliciousness. Heart is most familiar in flavor to other muscle cuts (aka steaks), tongue is super mild and super tender! The slow braise was amazing! Let us know how you've prepared it!
